Well, I got off track a little from my posting for the last few weeks – sorry! I have been sticking with my new diet plan and things are going well. My husband has been out of town, so instead of my cooking healthy dinners, I’ve just been eating more simple things, like a baked potato with cheese and loaded with fresh vegetables. Or grilled salmon with lemon dill sauce and a fresh, organic salad.

My fav dinner – baked potato, fresh vegetables, topped with a little cheese – yum!


In related news, I joined a co-op for organic fruits and vegetables. I go every Saturday to pick up my order and I get to enjoy fresh fruits and vegetables all week long. And let me tell you this. I have never ‘bought’ in to the whole organic thing, mostly because it’s ridiculously expensive, BUT this is the same price I was paying AND they taste incredible. I have never been so excited to eat vegetables in my whole life. Another upside is that I get stuff I wouldn’t normally buy, like beets and rutabags. Who knew I liked beets so much?
